Single Parenting and Spaghetti Squash

I am absolutely ready to be done with our transition. Yet, we know it could be a while. When Britt or Rhea get in trouble they cry, "I want my Daddy!" very pitifully. We will be glad to get a whole four days with him!

I'm really excited by those that are joining us in the plan to get fitter! Not everyone chose to do the fitness test, but have devised their own plan - perfect! Brian finished his test and looked rather smug about his 95Th percentile in strength. We've both done fairly well this week. Keep up the good work and thanks for joining us.

One thing I am trying to do is eat fewer refined carbohydrates. The closer you can eat your food to how it grew, the better it is for you - oat groats are better than minute oats.

We tried spaghetti squash, and we (Brian and I) loved it! In fact, I like it more than noodles, which surprised me, because I remember it being quite different in my childhood. It was easy to prepare, I just halved it, plopped it on a cookie sheet, covered with foil, and baked it at 350 degrees until I remembered it. It came out prefect, stringing out very noodle like, with a slightly crunchy texture. Not soggy or mushy. The kids didn't mind it but would rather have the noodles. Here is the good part, a half cup of noodles has about 90 calories and 18 carbs, while a 1/2 cup of spaghetti squash has 16 calories and 3.5 carbs. Two entire cups of squash would be less than the 1/2 cup noodles! I'm all for eating more!

Ei.. I love your new blog 'look' all decorated up for winter! Maybe I don't know how to prepare it, but we tried spaghetti squash once and were grossed out! Perhaps our tastes are not quite as sophisticated as yours hmmm?

EWH! don't torcher the children with that squash. Nothing could never replace noodles. But a yummy squash would be acrorn or butternut with butter and brown sugar. yummy in the tummy. Love the background .Ei
