Whew, another year of science projects done. We were disappointed this year because the projects were due at the end of February instead of in May, which limited our choices. We had a neat ant project planned. Ryland's project was an experiment to test if bread baked using honey would stay
fresher (be slower to mold) than bread baked using sugar. One of my bread books said that honey is a natural preservative. The results? Honey grew mold two days before the sugar... interestingly, the honey grew different mold than the sugar. So perhaps honey is a natural preservative, just to certain molds. We also conjecture that the honey made the bread more moist.

t was experimenting with the effects of simple and complex carbohydrates on blood sugar. This necessitated having a control group, myself. It took us l
onger to get our results because we tested 10 grams of sugar, apples, and bread, three trials each testing our blood sugar every 10 min for 40 min. We had to test 2 hours after we ate and Caden couldn't be too low or too high. Our results? Simple carbs affect blood sugar right away, but never really spike, while complex carbs take longer to affect blood sugar, but then create a spike. We also learned that when I eat sugar (simple carb) my blood sugar drops. Maybe this is why I feel so yucky when I eat sugar. Caden lov
